- Heat a pan. Add oil, black mustard seeds, methi seeds, curry leaves, sliced fresh coconut, dried red chillies.
- Mix well and fry for 1-2 minutes.
- Add turmeric powder, salt. Mix well.
- Add grated fresh coconut and boiled rice.
- Mix well and toss it til the rice is heated through.
- Add roasted crumbled peanuts.
- Serve in a bowl.
